Sous vide Lobster with Garlic and Herbs

Ingredients:
Lobster 500g
Garlic 10g
Thyme 5g
Rosemary 5g
Butter 20g
Peppercorns 3g
Sliced Lemon 5g
Salt - To Taste
Directions:

  • Clean & de-vein the lobster, season it with salt, pepper, thyme, rosemary and minced garlic. Add small butter pieces on top and push the meat back in the shell.
  • Using the Vacuuming appliance, in the food graded bag cut and place lemon slices along with the seasoned lobster, vacuum-seal the same on a medium level, once sealed take the bag out.
  • In the Combination steam oven place this sealed bag on the perforated tray at level 2. Cook the lobster using the Sous Vide Function on 100% steam with 60*C humidity for 1 hour.
  • Once done, remove the lobster from the steam oven & serve it hot.
